1 cup of Long Grain White Rice
1/15 oz Can Red Beans
4-5 Boneless, Skinless Chicken Breasts or Cut of Choice
½ lbs Sausage (Andouille or Smoked)
Smoked Cajun Creole Seasoning
Oil
Pound chicken meat flat and season both sides with the Cajun Creole Seasoning and place in the refrigerator for 10 minutes.
During this time, place 1 C of rice and 4 cups of water in pot with lid and bring to a boil, turn down to simmer.
Layer 1 can of Beans with liquid, 1 TBS of Seasoning, and Diced Sausage in a sauce pan and cover on low heat.
Preheat a heavy skillet with 1-2 TBS of Oil and add chilled chicken. Blacken it on one side and flip over, placing it in a 400 degree oven until done (maybe 10 minutes). Drain the rice and place in a ring on a large serving platter, stir and add the sausage and beans to the center and finish with the blackened chicken. Sprinkle lightly with Seasoning
